Our 6th anniversary beer is modeled after a traditional English-Style Old Ale. These rich amber ales were traditionally fermented in wooden vessels and likely had wild yeast that crept into the vessels. We use a traditional english malt base with a healthy dose of caramel malts and a light hopping of fuggle hops for this recipe. The beer was then fermented in barrels with a blend of traditional English ale yeast and Brettanomyces. The resulting beer is sweet and rich, with a biscuity backbone, and a distinct wood flavor. The finish is dry and earthy from the Brett. This beer should age exceptionally well as the Brett continues to develop even more funky flavors over time.
