Brewed as a part of the Arizona Pure Water Challenge (http://www.azpurewaterbrew.org/), this is a traditional Trappist-inspired Tripel. We brewed this beer as part of an effort to raise awareness of water conservation issues, and it was brewed using purified recycled water. The water was extensively tested for any contaminants after being run through a multi-step purification system, and then run through our brew process to produce this strong golden ale with caramel, honey, and light stonefruit notes. We took the resulting beer, and tucked a portion of it away in chardonnay barrels for almost a full year. The beer continued to dry out, while picking up a vanilla-like sweetness and an overtone of the wine which previously inhabited the barrels.
