This light, refreshing beer is our take on a traditional Belgian Witbier. We use a simple wheat-based grain bill to start with a clean crisp base with just a hint of grainy sweetness. Subtle hops give a hint of bitterness to complement the sweetness, and a late kettle addition of dried orange and lemon peels along with a dose of freshly-ground coriander produce a subtle citrus aroma with just a hint of spice backbone. Our house Belgian strain of yeast accentuates and complements the coriander with a subtle clove-like dryness to give a crisp finish. An addition of oats in the grain bill ensures that this light beer still has a rounded mouthfeel and a head that lasts for what seems like days.
